5 russet potatoes
2 tablespoons grated parmesan cheese
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon paprika powder
1/ teaspoon ground black pepper
2 tablespoons olive oil
1 cup cooked minced beef
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1/ cup grated cheddar cheese
1/2 cup sour cream
2 tablespoons chopped green onions
* Preheat oven too 400F.
* Wash potatoes well and pat dry. Prick the potatoes all over and place in the preheated oven and bake for about an hour or until soft and cooked through.Let cool.
* When potatoes are cool enough to handle, cut potatoes in half lengthwise. scoop out pulp (save for another use), leaving 1/4 inch shells. Place potatoes on a greased baking sheet.
* Preheat oven to 475F.
* Combine parmesan, garlic powder, salt, pepper, paprika and oil. Brush potatoes all over with the parmesan mixture and bake in the oven for about 8 minutes and then turn over to bake the other side for another 8 minutes. Remove from oven and sprinkle beef, peppers and cheddar cheese on each potato skin and return to the oven to bake for another 2-3 minutes.
* Transfer potatoes on a serving platter and then top with sour cream and chopped green onions. Serve hot with your favorite dip.
