Cheesy Garlic Mussels

12 large mussels
1/2 cup grated cheese
1 small red bell pepper, minced
1/2 teaspoon garlic powder
1/2 cup fresh ground breadcrumbs
1/4 cup water
parsley for garnish


* Boil mussels until they slightly open, about 4-5 mintues. Remove the empty shells. Set aside.

* Preheat oven to 180C.

* Combine cheese, bell pepper, breadcrumbs, garlic powder and water in a bowl. Mix well until it turns like paste. Cover each mussel with breadcrumbs mixture and arrange on a baking sheet. Bake for about 15-20 minutes or until light golden in color.

* Arrange on a serving platter and garnish with parsley. Serve hot and enjoy!
