A quick and easy to make Asian recipe consisting of chicken,vegetables and noodles, stir-fried in a delightful sweet & spicy sauce made of honey, soy sauce & chili making it a sure blockbuster every meal time.
2 chicken breast fillets, thinly sliced
1 bird’s eye chili, seeded and thinly sliced
1 clove garlic, finely sliced
½ teaspoon sesame oil
1 tablespoon vegetable oil
1 red bell pepper, cut into diamonds
100 grams snow peas, sliced
4 spring onions, sliced diagonally
¼ cup soy sauce
¼ cup honey
¼ cup chicken stock
juice of 1 lime
zest of 1 lime
200 grams fresh egg noodles
lime wedges, for garnish
* In a bowl, combine chicken breasts, red chili, garlic and sesame oil; mix well.
* Heat oil in a wok over medium heat, add chicken mixture and stir fry for 3-4 minutes. Add capsicum and snow peas and stir-fry for 2 minutes. Make a well in the center of the wok and stir in honey, soy sauce, chicken stock, lime juice and lime zest; stir until sauce bubbles.
* Add egg noodles and spring onions; toss well. Continue to stir-fry for 2 minutes and remove from fire.
* Transfer in a serving bowl and garnish with lime wedges. Serve hot and enjoy!
