Chicken Pasta Supreme

A delectable yet light pasta dish to brighten up your day.

Protein-rich food like chicken and ham are good source of some B-vitamins that help in the release of energy from the food that we eat.


2 tablespoons butter
1 tablespoon olive oil or vegetable oil
3 cloves garlic, minced
1 small onion, minced
1/4 teaspoon oregano
2 tablespoons finely chopped basil leaves
1/2 kilogram chicken breast fillet, cut into bite-sized portions
2-4 slices of ham, cut into strips
1/2 cup sliced black olives (optional)
1 cup tomato sauce
2 tablespoon chili sauce or chili oil
salt and pepper, to taste
1 medium red or green bell pepper, diced
1 can (300g) all-purpose cream
cheddar cheese, grated
cooked pasta noodles


* Heat butter and oil, sauté onions and garlic. Stir in the oregano and basil. Add in chicken and ham, cook covered about 6 minutes until cooked through. Add olives, tomato sauce, chili sauce/chili oil and season it with salt and pepper, depending on your desired taste. Pour in cream and stir. Simmer for about 8 to 10 minutes. Then add in the red bell pepper.

* Place cooked pasta in an oven-proof dish and add in the chicken sauce. Garnish with some basil and grated cheese on top. Bake for about 10 to 15 minutes or until cheese turns bubbly and melted.

Serve hot with Garlic-herb bread. Happy eating!
