This dish is a perfect Sunday meal for your family. A wonderful hearty dish to enjoy by everyone. Serve with bread or steamed white rice and you’ll surely clean up your plate and ask for more.

Ingredients

1 kilogram chicken drumsticks, or your choice of part
3 tablespoons cooking oil
1 large-size potato, cubed
1 medium-size onion, chopped
1 large-size carrot, sliced
1 medium-size yellow bell pepper, julienned
1 1/2 cups canned crushed tomatoes
1 cup tomato sauce
1/2 cup canned pineapple tidbits
1/4 cup frozen green peas, (optional)
Salt and pepper, to taste
1 tablespoon cornstarch, dissolved in
3 tablespoons cold water

Procedure

* Season chicken with salt and pepper. Set aside.

* In a skillet, heat oil. Fry potatoes until slightly brown. Remove from oil and place in a plate with paper towel. On the same skillet with oil lightly fry onion and chicken.

* Transfer chicken mixture to a casserole dish. Add crushed tomatoes, tomato sauce, pineapple tidbits, and carrots. Simmer for 30 minutes or so.

* Pour in cornstarch mixture and stir until sauce thickens. Add in prepared potatoes, yellow bell pepper, and green peas. Season with salt and pepper according to taste. Simmer for 5 minutes.

Serve and enjoy!
