Chop Suey is a Chinese inspired dish that has been adopted by many countries and has been popular due to its wide variety of vegetables and meat in it. Truly very healthy and delicious.

Ingredients

1 chicken breast fillet, cut into thin strips
200 grams chicken liver, chopped
4 cloves garlic, minced
1 medium onion, chopped
2 cups cauliflower florets
2 cups broccoli florets
half a head of cabbage, roughly chopped
100 grams young corn
1 red bell pepper, cut into wedges
1 carrot, sliced 1cm thick
100 grams snow peas, tips cut off
12 boiled quail eggs, peeled
2 cups vegetable or chicken broth
1 tablespoon cornstarch, dissolved in
1 tablespoon water
1 tablespoon cooking oil
1 teaspoon sesame oil
1 teaspoon fish sauce
salt and pepper, to taste

Direction

* In a wok, heat oil over medium heat. Saute garlic and onion until soft, about 2-3 minutes. Add the chicken and liver, cook for about 4 minutes.

* Add carrots, broccoli, cauliflower and young corn. Stir fry for about 2 minutes. Mix in snowpeas and bell pepper, cook for about a minute. Pour in the broth and bring to a boil. Pour in cornstarch mixture and stir until thick.Season with fish sauce, salt and pepeer according to taste. Add the cabbages and quail eggs and cook for another 1-2 minutes.

* Transfer onto a serving dish and enjoy!

Tip: Instead of chicken and chicken liver, you may also use prawns, fish, beef or pork. And with the vegetables, you may also use other veggies especially the ones available during the season.
