Ingredients
2 cups coconut meat, shredded + extra 1/2 cup
1/2 cup chopped almonds
2 tablespoons maple syrup or raw honey
1 1/2 tablespoons coconut oil
Juice and zest of 1 small-sized lemon
Drop of vanilla extract (optional)
Procedure
* In a food processor or blender. Place all ingredients except the extra shredded coconut. Mix well until blended.
* Scoop a spoonful and roll into balls. Place extra coconut in a plate and roll the prepared balls. Place on a tray with parchment paper and let it chill in the refrigerator for about 1 hour or until firm.
