Creamy and Cheesy Bacon Carbonara

250 g spaghetti noodles, cook as per packet direction.
200 g bacon, diced
1 pc green capsicum, diced
1 medium onion, chopped
1 tsp chopped garlic
1 tbsp butter
1 can cream of mushrooms
1 cup all purpose cream
1 cup evaporated milk or full cream milk
1/2 cup grated parmesan cheese
1 tsp fresh thyme
1/2 tsp ground black pepper


*In a heavy non- stick saucepan, melt butter and cook bacon until slightly crispy, set aside 2 tablespoons of bacon for toppings. Add in garlic and onion, cook for about a minute and add in the diced capsicum. Cook until capsicum softens. Pour in the rest of the ingredients and simmer for about 6 minutes, stirring while cooking. Pour over cooked pasta and sprinkle with grated parmesan cheese. Top with the reserved crispy bacon and fresh thyme.

Tip: This delicious pasta recipe is best served with garlic bread or toast.
