Crema Frutti Di Mare Penne ( Seafood Penne )

Have a feast with this Italian dish. Satisfying penne pasta with assorted seafood in a velvety smooth cream sauce. Partner this pasta with green salad to complete your meal and add color to your plate.


Seafood mixture

1 1/2 cups fish fillet cutlets
1/2 cup scallops, whole or sliced in half
1 medium squid, cut into rings
8 pieces small prawns, shelled, deveined
salt and pepper, to taste
4 pieces bacon strips, chopped
2 tablespoons butter
1 tablespoon chopped garlic
1/4 cup chopped celery
6 pieces shiitake or button mushrooms, thinly sliced
1/4 cup flour
olive oil

Cream mixture

1/2 cup evaporated milk
1 cup low fat milk
1/2 cup water
1/3 cup all-purpose cream
1/8 teaspoon nutmeg
500 grams penne or linguine, cooked al dente
1/4 cup grated cheddar cheese
1/4 cup grated quick-melt cheese
2 tablespoons chopped parsley
ground pepper, to taste


Season each seafood with salt and ground pepper, depending to taste. In a hot pan with 1 tablespoon olive oil, sauté fish fillet, scallops, squid, and prawns. Set aside

In the same pan, cook bacon until brown and crisp. Set aside bacon. Use the bacon fat, add in butter. Sauté garlic, celery and mushrooms. Stir in flour and cook while stirring for 30 seconds. Do not brown. Pour in combined cream mixture; evaporated milk, low fat milk, water, and all-purpose cream. Mix well and simmer for 5 minutes. Stir in the cooked seafoods and bacon then season with pepper and nutmeg.

When the sauce is simmering, stir in the cooked pasta. Add in the cheese and parsley continue to mix until sauce coats pasta. Turn off the heat. Serve on a large platter and enjoy!
