12 egg yolks
375 mls evaporated or full cream milk
1/2 cup condensed milk
8 tbsps white sugar
1 tsp lime or lemon juice
2 llanera molds
*Prepare 2 llaneras, place 4 tbsps sugar in each. Set each llanera on low heat. Using tongs, move llanera in a circular motion over flames to avoid sugar from burning and to distribute heat melting liquid on the bottom of the mold. Do this until sugar has completely melted and turns light golden brown in color. Remove from heat to allow caramel to cool and harden.
*Prepare the steamer.
*Combine egg yolks, evaporated milk and condensed milk. Gently stir until just blended. Strain the egg mixture using a cheesecloth or strainer and pour into the llaneras.
*Cover llaneras with foil and arrange on a steamer. Steam for 40-45 minutes. Remove from the steamer and allow to cool. When cooled, refrigerate. To serve, turn flan over on a serving plate, with the caramel on top. Enjoy!
Tip: Can use any size or shape of cooking molds preferred.
