2 large yellow onions
1 egg, beaten
1/4 cup cornstarch
2 tablespoons flour
2 teaspoons salt
1 /2 teaspoon ground pepper
enough oil for deep frying
* Cut off top and stem of onions and peel the outer layer. Slice onions in strips. Set aside.
* In a shallow bowl, combine cornstarch, flour, salt and pepper and mix well.
* Dip onions in egg and drench in the flour mixture until well coated. Do this in batches.
* Heat oil in deep frying pan over high heat. Fry coated onions in batches until light golden brown and crispy, about 2-3 minutes. Drain on paper towels. Transfer onto a serving platter and serve with your favorite dip. Serve hot and enjoy!
