This cold entrée is very light and refreshing to serve. Both appetizing and easy to prepare. Can be served as a dip to your chips, finger foods or as a sauce to your grilled and roasted dish.
1 firm medium size cucumber
1/2 cup plain yogurt
1/4 cup all-purpose cream
2 tablespoons chopped dill
2 tablespoons fresh mint, finely chopped
1 teaspoon lemon juice
Salt and pepper
* Slice cucumber in half lengthwise. Remove seeds. Finely shred. Set aside.
* In a bowl, mix yogurt, cream, dill, and mint. Season with salt and pepper. Gently fold in shredded cucumber. Refrigerate at least 30 minutes.
Serve as an appetizer or together with your main dish.
