Easy Fish Curry

This super quick and easy fish curry recipe will wow your friends and family, they’ll think you slaved over it for an entire day. Serve with steaming white rice for a hearty lunch that will get you going the whole day.


1 lb white fish fillets, cut into chunks
1 (400 g) can diced tomatoes
2 cups vegetable stock
1-2 tablespoons madras curry paste
1 tablespoon vegetable oil
1 large onion, chopped
1 clove garlic, minced


• Heat the oil in a deep skillet over medium-high heat. Saute onion and garlic until soft, about 5 minutes. Add the curry paste and stir fry for 1 to 2 minutes. Then

• Add the tomatoes and the stock and bring to simmer. Add the fish pieces and cook for 4 to 5 minutes or until the fish flakes easily.

• Put about a cup of white rice in a bowl. Top with fish curry and serve.
