8 hard-boiled eggs, peeled
1/2 cup whole egg mayonnaise
1/4 cup plain salad dressing
1 small white onion, finely chopped
1 tbsp chopped green onions
1/2 tsp salt
1/2 tsp ground black pepper
Slice one egg (preferably with an egg slicer) and set aside. Chop remaining eggs.
In a a big bowl, combine all ingredients and mix well. Taste and season again if needed (according to your preference). Refrigerate. Serve on lettuce leaves or on your favorite bread and top with sliced eggs.
Tip: You can always adjust the taste and consistency of this dish by adding or reducing the amount of ingredients.
