2 cups coconut milk
¼ cup water
2 tablespoons chopped ginger
3 tablespoons fish sauce
salt and pepper, to taste
1 kilogram escargot (you can also use sea snail), washed and cleaned
1 cup chopped water spinach
2-3 pieces chopped green chilies
* In a hot saucepan, put coconut milk and 1/4 cup of water. Simmer for about 3 minutes or until slightly thick. Add ginger, fish sauce, and season with salt and pepper according to desired taste. Add in escargot, cover and simmer for 10 more minutes. Place in water spinach and green chilies.
Serve with steamed rice and enjoy!
