Fish with black beans and mushrooms

Here’s a good treat to celebrate Easter. A fish recipe with black beans and mushrooms a healthy treat for everyone!

2 slices of fish (of your choice)
2 tablespoon black beans from a can
1 small can of whole button mushrooms,you can also use fresh ones
1 teaspoon minced garlic
1 small red onion, sliced
2 teaspoon corn flour mixed with 4 teaspoon of water
Salt and pepper to taste if preferred
1/4 cup olive oil for frying
2 tablespoon olive oil for sautéing
1 cup water
3/4 tsp sugar
Spring onions to garnish

Wash fish slices well. Pat dry. Season with salt and pepper.
Heat up olive oil to a medium to high temperature and fry fish for 2-3 min on each side. Drain and set aside.

For the sauce:
Saute garlic and onions. Add in black beans, mushrooms and 1 cup of water. Bring to a boil. Add in the corn flour mixture slowly, carefully not to over thicken the sauce. Season with pepper and sugar to taste.

Pour the sauce onto the fish and garnish with spring onions.
