1 ½ tablespoons olive oil
2 tablespoons chopped onion
1 cup ground beef
1 1/2 teaspoons taco seasoning powder
1/4 cup canned kidney beans, drained
Salt and pepper
1 cup quinoa, cooked
1/4 cups grated pepper jack cheese
1/2 cup grated cheddar cheese
1/4 cup sour cream
4 large red or green bell peppes, halved and seeded
* In a hot pan, sauté onions in olive oil until translucent. Add ground beef, Season with taco seasoning powder, salt and pepper. Put kidney beans and cook until beef is browned.
* Preheat oven to 250°F .
* Transfer beef mixture in a bowl, mix in cooked quinoa and pepper jack cheese. Stuff inside the prepared pepper. Top it with cheddar cheese. Bake in the oven for 3-5 minutes over or until cheese melts.
* Drizzle with sour cream and garnish with chopped parsley before serving.
