Fruity Granola Yogurt Trifle

2 ½ tablespoons maple syrup
2 ½ tablespoons water
2 tablespoons olive oil
2 ½ tablespoons honey
1 teaspoon ground cinnamon
½ teaspoon ginger powder
½ teaspoons vanilla extract
1 cup whole oats
½ cup pecans, chopped
½ cup rice cereal, crisped
Salt to taste

Rest of the Trifle
½ cup blueberries
½ cup raspberries
500 ml vanilla yogurt
1 tablespoon lemon juice


* Preheat oven to 170C.
* Mix vanilla, water, honey, maple syrup, oil, salt, ginger, and cinnamon in a large bowl. Add in rice cereal, oats, and pecans then toss evenly to coat.
* On a baking sheet, spread the mixture then bake for about 20 minutes or until crisp, stirring once every 10 minutes. Set aside to cool.

* Mix blueberries, strawberries and lemon juice.
* In trifle glasses, arrange, granola, yogurt and fruits to layers, then refrigerate for at least 2 hours before serving.
