Garbanzo Bean Salad

This healthy and colorful salad is rich in protein. Serve this filling and delicious garbanzo bean salad for family dinners. Perfect to pair with grilled fish or chicken.


1/2 cup canned garbanzo beans, drained
1/2 cup chopped cherry or regular tomatoes
½ of a medium cucumber, peeled, seeded, chopped
1/4 cup chopped basil leaves
2 tablespoons chopped mint leaves
1 tablespoon chopped fresh parsley
1 1/2 tablespoons lemon juice
2 tablespoons olive oil
1 garlic clove, chopped
1/4 teaspoon mustard
Salt and pepper, to taste


* In a salad bowl, whisk lemon juice, olive oil, garlic and mustard. Season with salt and pepper. Toss in all remaining ingredients.

* Cover. Stirring occasionally, refrigerate until salad is chilled.

Serve as side dish or main course.
