Breathe a new life into fried fish fillets by changing up the breading. Instead of using breadcrumbs that has a subtle taste, why not try a mixture of cashew, garlic, basil, parmesan cheese and olive oil. For a healthier take, bake instead of frying them.
2 pieces salmon fillets
1/2 cup cashew nuts, finely chopped
1 tablespoon minced garlic
1 teaspoon finely chopped fresh basil
2 tablespoons parmesan cheese
2 tablespoons olive oil
1 lemon, cut into wedges
Preheat oven to 350°F. In a bowl combine cashew, garlic, basil, and parmesan cheese. Set aside.
Brush baking pan with oil or put parchment paper, place salmon fillet. Spoon garlic and cashew mixture on top of salmon fillet. Put it evenly on both fillet. Drizzle olive oil on top and let it cook for about 7 to 10 minutes or until it turns golden brown. Remove from oven and transfer into a serving platter. Serve with lemon wedges and blanched asparagus or your choice of vegetables.
You can also use chicken fillet or other fish fillet if desired. If you want some crisp to your salmon skin, remove it from the fillet and bake it with olive oil for about 5 minutes. It can be serve as garnish to your meal.
