Garlic Chicken and Mashed Potatoes Casserole

You’ll surely find something to rejoice about in this easy to prepare and delightful dish! This special garlic chicken and mashed potatoes recipe is meant to be shared and enjoyed in the company of people you love.


2 tablespoons olive oil
1/2 cup minced garlic
1/2 kilogram chicken breast fillet, chopped into bite size pieces or chunks
3 tablespoons liquid seasoning or you can also use soy sauce
1/2 kilogram potatoes, boiled, skinned and mashed
1/4 cup butter, softened
3/4 cup all-purpose cream
Salt and pepper, to taste
1/2 cup grated cheddar cheese
1/2 cup bacon bits
2 tablespoons chopped green onions


* To make mashed potatoes: In a bowl, combine potatoes, butter, all-purpose cream and season with salt and pepper. Transfer in a medium size casserole or in an ovenable dish. Set aside.

* To make garlic chicken: Heat oil in a pan and fry garlic over low heat until golden brown. Remove garlic, leaving about 2 tablespoons in the pan. In the same pan, add chicken and season with liquid seasoning. Sauté until chicken is cooked and tender. Transfer chicken into prepared mashed potatoes. Top with the reserved fried garlic, cheddar cheese and bacon bits.

* Bake in the oven until cheese melts and bacon is crispy. Remove and sprinkle with green onions before serving.
