Grilled Cheese with Tomato and Kale Sandwich

Simple and classic would be the best words to describe this lovely sandwich. Made with staple ingredients that would be available in your pantry. White bread, tomatoes, kale leaves and mozzarella cheese turns into one superb sandwich.


2 slices of white or wheat bread
2 teaspoons soft butter
1/2 cup kale leaves or spinach
2 tablespoons chopped tomatoes
mozzarella cheese, desired amount
ground black pepper


* Spread butter on both sides of the bread slices. Place kale leaves, chopped tomatoes and topped with mozzarella cheese, season with black pepper. Place the other white bread on top. Grill in a pan or oven. Cook until cheese melts. Serve with your favorite beverage and enjoy!

Kale and spinach are low in calories, high in vitamins A and C, and a good source of calcium and iron.
