Grilled Lemon and Garlic Chicken

Chicken is simple and easy to cook when grilled. It is tastier if skinned and cut into pieces then marinated overnight. Great for backyard party gatherings.


1 kilogram boneless chicken breast, cut into large pieces
6 tablespoons olive oil
5 tablespoons lemon juice
2 tablespoons chopped onion
4 cloves of garlic, minced
¼ teaspoon paprika
Pinch of black pepper
¼ cup thinly sliced onion leeks

Grilling Method

* Marinate chicken with the rest of the ingredients except onion leeks, for at least an hour.

* Preheat the grill to medium heat and grill chicken pieces for about 20 minutes turning as necessary.Ensure that the chicken is thoroughly cooked before serving by inserting a skewer into the thickest part of the breast and checking that the juice coming out is clear.

* After grilling, transfer onto a large platter and garnish with onion leeks on top. Serve and enjoy!
