Ingredients:
1 kg salmon fillet
2 tablespoons lemon juice
salt and pepper to taste
2-3 cups basil leaves
1/4 cup toasted walnuts
1 tablespoon minced garlic
1/2 cup olive oil
1/2 cup all purpose cream
1 tablespoon cooking oil
Procedure:
• Using a food blender or processor, blend lemon juice, basil leaves, walnuts, garlic, olive oil and cream together until well combined and creamy. Set aside.
• Preheat grill to medium heat. Brush grill grate with oil.
• Season fish fillet with salt and pepper and lemon juice according to your taste. Marinate for 5 minutes. Grill salmon fillets on each side for 6-8 minutes or until flesh flakes easily with a fork.
• Arrange grilled salmon fillets on a plate and top with creamy pesto sauce. Serve hot with your preferred vegetable side dishes. Truly a healthy treat!
