Herbs and Parmesan Crumbed Fish

1 lb dory fillets or any white fish fillets
3/4 cup panko breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup cornstarch
1 egg, beaten
1 tsp fresh or dried thyme
1/2 tsp Spanish paprika
1 tsp dried basil leaves
2 tbsps chopped parsley
olive oil for pan-frying


Rinse fish and pat dry with paper towels.Set aside. Mix breadcrumbs, parmesan cheese, thyme, paprika and basil leaves in a bowl.

On two separate shallow dishes, prepare breadcrumbs mixture and cornstarch.

Coat fish with cornstarch then dip in egg and coat with breadcrumbs mixture, work in batches.

Heat olive oil and fry fish fillets until golden brown on each side. Drain on paper towels. Arrange fish on a serving dish and sprinkle parsley on top. Serve with your favorite side dish.
