A healthy way to start your day! Eating salad would be more special with this exciting, vibrant, delicious mandarin orange salad with orange dressing recipe that could definitely tickle your taste buds and give you balanced nutrients. Serve as your main course or as appetizer.
6 wonton wrappers, cut into strips, deep-fried or baked
1 cup grilled chicken strips (you can also use your leftover chicken)
2-3 cups baby spinach, washed
1 cup canned or fresh mandarin oranges
1 bell pepper, seeded and diced
1 cup sliced snow peas
1/2 cup thinly sliced carrots
1/4 cup sliced almonds
1 tablespoon chopped parsley and sesame seeds, for garnish (optional)
2 tablespoons vegetable oil
1/4 cup olive oil
3 tablespoons orange juice
1 teaspoon orange zest
1-2 tablespoons honey
1 clove garlic
1 teaspoon Dijon mustard
1/4 teaspoon kosher salt
* In a blender or food processor. Mix all mandarin dressing ingredients. Blend until thick. Set aside.
* In a large salad bowl, arrange spinach, chicken, oranges, wonton wrapper, bell pepper, snow peas, carrots, and almonds. Drizzle with prepared mandarin dressing and garnish with parsley and toasted sesame seeds.
You can also replace chicken with smoked salmon or tuna, if desired.
