Mesclun with Honey Orange Dressing

Summer means sun, sand, and the beach. Having a hot and sexy body is a must. Enjoy your summer with this healthy salad. Mixed young leaves such as Lettuces, chicory, and arugula with tomatoes, radish and sliced oranges. Drizzled with luscious honey orange dressing with mustard.


2 cups (100 grams) mesclun salad
1 medium tomato, sliced
1 small radish, sliced
1 mandarin orange, sliced
2 tablespoons cider vinegar
2 tablespoons honey
3 tablespoons fresh orange juice
2 tablespoons cream cheese
1 tablespoon lite mayonnaise
1 teaspoon mustard
1 tablespoon minced white onion
pinch of salt and pepper
3 tablespoons olive oil


* Heat vinegar, orange juice and honey in a saucepan over low heat, stirring until honey dissolves. Pour into a bowl and cool. Whisk in cream cheese, mustard, onion, pinch of salt and pepper. Gradually whisk in oil. Transfer in a sauce boat.

* Arrange mesclun, tomatoes, radish, and oranges on a salad platter. Drizzle dressing over the salad.

You can also add tuna chunks, steamed chicken or grilled lamb in the salad. Use fresh and organic ingredients to achieve the healthy and clean taste.
