Mixed Vegetable Chowder

What is more comforting than a steaming hot bowl of soup on a cold and rainy nights?
This mixed vegetable soup recipe is a sure win to everybody’s heart. Smooth and creamy soup with a fresh and delicate taste.


1-2 chicken broth cubes
2 1/2 cups water
2 cups broccoli florets
1 large-sized potato, peeled, diced
1 large-sized carrot, peeled, diced
1/2 cup chopped celery
1/4 cup margarine or butter
1 medium-sized onion, chopped
3 tablespoons flour
3 cups evaporated milk
1 cup grated cheddar cheese
salt and pepper, to season


* In a heavy bottomed pot, boil water. Dissolve broth cubes in boiling water. Add potatoes, carrots, and broccoli. Bring to a boil. Cover with lid. Simmer over low heat for 15 minutes.

* Melt margarine (or butter) in a saucepan. Sauté onions and celery for 4 minutes. Add in flour. Mix to combine well. Slowly add in milk, stirring constantly. Then add in cheddar cheese. Continue stirring. Simmer for 10 minutes until mixture thickens. Stir into the vegetables, mixing until smooth. Season with salt and pepper.

Serve with crackers or your choice of bread. You can also put fish for a more hearty soup meal.
