There are quick ways to prepare tasty snacks. You’ll surely enjoy this fast and easy to make onion rings in zesty batter and rich and creamy thousand island dip.


1 large onion, peeled
1 1/2 cups all-purpose flour, sifted
1 1/4 cups lime juice
1 cup soda
2 tablespoons lime rind, finely grated
cooking oil for frying
salt and pepper to taste

For Thousand Island dip:

1/2 cup lite mayonnaise
2 tablespoons tomato or banana ketchup
1 teaspoon pickle relish
salt and pepper to taste


* Cut off 1/4 of the top of onion and peel away skins. Slice into rings.

* To make batter: Place flour in a bowl and gradually stir in lime juice and soda. Mix well to combine. Add lime rind, season to taste with salt and pepper.

* Soak onion in hot water for 1 minute and then soak in ice cold water for 3 minutes. Lightly dust onion with flour and dip in prepared batter. Fry in hot oil until golden. Drain on a paper towel to remove excess oil.

To make dip: combine all ingredients in a bowl. Season with salt and pepper. Mix until blended.
*Serve on a platter and place the dip on the side.
