1 cup almond milk
1/2 cup plain yogurt
1/2 cup butter, melted
2 1/2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup grated Parmesan cheese
1/4 cup sugar
1-2 tablespoons basil leaves, finely chopped
* Preheat oven to 400°F. Grease or line muffin pans with paper cups. Set aside.
* In a bowl, beat egg with a fork. Mix in milk, yogurt, and butter. Set aside.
* In a second bowl, mix flour, baking powder, salt, Parmesan, sugar and basil. Add liquid mixture, stirring only as needed to moisten dry ingredients.
* Spoon batter into muffins cups until ¾ full. Bake in the oven for 20 minutes or so.
Serve as an afternoon tea or snack.
