This is not your typical shortbread. It is made from a special cow’s cheese called Gorgonzola. Crumbly, creamy, buttery, salty, with a bite from the blue veining. Combined with nutty pistachios and honey. Perfect to serve with coffee and tea.

Ingredients

3 cups all-purpose flour
1 1/3 cups cornstarch
1 1/2 cups butter, cut into cubes
1/2 teaspoon salt
1/4 cup gorgonzola cheese, crumbled
1/4 cup chopped pistachios
4 tablespoons raw honey

Procedure

* In a large bowl, sift flour and cornstarch together. Add in butter, salt, cheese, pistachios, and honey. Use your hands to mix all ingredients (make sure your hands are clean). Make a semi-stiff dough. Roll out into desired size logs. Cover with cling wrap. Chill in the refrigerator until firm.

* Cut dough with a cookie cutter. Bake on a cookie tray with parchment paper over 180C for about 20 minutes or until golden brown.

Serve with a cup of coffee or tea. If Gorgonzola cheese is not available, you can also use goat’s cheese, brie, feta cheese, or camembert.
