1 pack (8 oz) cream cheese
1 can cream of mushroom soup
½ cup cooked green peas
1 cup rice or pasta, cooked
2 cans tuna, drained
1 small can of sliced mushrooms, drained
2 tablespoons dried chives
1 medium onion, chopped
1 teaspoon red pepper flakes or powder
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs
salt and pepper to taste
Preheat oven to 400 degrees F.
Put cream cheese and soup in an ovenable casserole dish. Microwave on high for 1 1/2 minutes. Stir to combine well. Add in rice, tuna, cream of mushroom soup, green peas, chives, onions, mushrooms, red pepper flakes, salt and pepper. Toss gently to combine. Cover and microwave on high for 5-6 minutes. Stir in a little bit of the cheddar cheese. Press mixture in dish and even out the top. Sprinkle with breadcrumbs and the remaining cheese.
Bake in the oven for 5-8 minutes or until the cheese has melted and the breadcrumbs turn golden brown. Serve with your favorite side dish. Enjoy!
