This appetizing dish is a fabulous treat for your all time occasions. Serve this with salads and you’ll have a delightful menu for your guests. This croquettes consist of chicken, ricotta cheese, cheddar cheese and parsley. Coated and rolled in breadcrumbs and cooked golden brown.
1/3 cup butter
1 1/3 cups flour
1 cup evaporated milk
2/3 cup ricotta cheese
1 1/4 cups shredded cooked chicken
1/2 cup grated cheddar cheese
2 tablespoons chopped fresh parsley
1 cup breadcrumbs
1 egg, beaten with 1 teaspoon olive oil
Cooking oil for frying
* In a saucepan, melt butter and add the flour gradually while stirring. Slowly add milk and continue stirring until the mixture thickens. Turn off the heat and add the cooked chicken, cheeses, and parsley. Keep in the refrigerator for about 10-15 minutes.
* Shape the mixture into a croquettes then roll in flour. Dip in beaten egg and roll in the breadcrumbs. Line a tray with parchment paper and arrange the croquettes on it. Place in the refrigerator and chill for another 10 minutes.
* Place 2 inches of cooking oil in the pan. Fry the croquettes over medium high heat until golden brown.
Serve on a platter with mayo dip and enjoy!
