Roasted Duck in Orange Marmalade

A special way to celebrate your holiday season is by preparing this easy to make duck dish. Marinated duck in a sweet and savory orange and ginger sauce.


1 whole duck
1/4 cup soy sauce
1 teaspoon chopped ginger
1 cup orange marmalade
4 tablespoons orange juice
2 tablespoons butter, softened
Salt and pepper, to taste


* Preheat oven to 375 °F.

* In a small bowl, whisk soy sauce, ginger, butter, orange juice and orange marmalade. Season with salt and pepper.

* Loosen the skin of the duck over the breast and rub in the prepared mixture. Rub evenly through the skin. Leave some marinade for basting.

* Place the duck on a baking tray breast-side down. Cook for 1 hour. Remove from the oven and turn the duck breast-side up. Brushing with the remaining marinade mixture. Continue roasting until golden brown.

* Rest roasted duck at least 10 minutes before serving.

Serve with side vegetables or baked potatoes.
