This is a whole new flavorful salad, perfect for a healthy and balanced diet. Smoked salmon with cucumber, feta cheese, tomato and arugula leaves. Drizzled with a light and special olive oil dressing.
Ingredients
1 cup smoked salmon, crumbled
1/2 cup feta cheese, crumbled
1 medium-sized cucumber, seeded, diced
2 medium- sized tomatoes, sliced
1 1/2 cup arugula leaves
Dressing
4 tablespoons olive oil
3 tablespoons lemon juice
1 1/2 tablespoons raw honey
pinch of cayenne pepper
salt and pepper, to taste
Procedure
* In a salad bowl, combine arugula leaves, tomatoes, cucumber, feta cheese, and salmon. Set aside.
* To make the dressing; combine all the ingredients in a bowl. Whisk and blend well.
* Drizzle dressing on top of the salad. Serve and enjoy! You can also add your choice of veggies.
