This main course is a very hearty meal. Good food for you to serve and good for the heart as well. Chicken fillet with creamy orange sauce and a hint of spice. Definitely satisfy your tastebuds.
2 chicken breast fillets
Juice of 1 medium-sized orange
3 tablespoons lemon juice
1 teaspoon black tea
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
2 tablespoons butter
1 small-sized onion, chopped
3 tablespoons plain yogurt
1 tablespoon all-purpose cream (optional)
1 tablespoon grated orange zest
Salt and pepper, to taste
* In a bowl mix: orange juice, lemon juice, black tea, garlic powder, paprika, and cayenne pepper. Coat chicken fillets with mixture. Marinate in refrigerator for 1 to 2 hours.
* Remove and drain chicken from refrigerator, reserving marinade and chicken separately.
* In a skillet or pan, melt butter. Sauté onion and garlic. Add in chicken. Sear on both sides. Pour in marinade and simmer for 20 minutes over medium-low heat. Remove chicken from pan and set aside.
* In the same pan with marinade, add in cream, yogurt, and orange zest. Season with salt and pepper. Simmer for another minute. Then put back the chicken and coat with the sauce mixture.
