300 grams prawns, head removed, peeled, leaving tail on
200 grams squid, cleaned, head removed, cut into rings
1 tablespoon minced garlic
1 small onion, chopped
1 teaspoon grated ginger
2 pieces long green chili
1 teaspoon chopped red chili
1 tablespoon fish sauce
2 -3 tablespoons sugar
2 tablespoons soy sauce
1 tablespoon cornstarch mixed in
1 cup pure coconut milk
ground pepper to taste
*Mix cornstarch and coconut milk, set aside.
*Saute garlic and onion, add in ginger. Stir well until ginger becomes fragrant. Add in squid, prawns and chilis, stir fry for about two minutes then pour in coconut mixture, fish sauce, soy sauce and sugar. Stir until sauce becomes thick.Sprinkle some pepper. Transfer into a serving dish and garnish with chopped long green chili and whole red chili. Serve with steamed rice. Enjoy!
