Spinach Pasta with Chicken Strips

Pasta is not fattening! If weight becomes a worry, make a habit of serving pasta with low-fat sauces and ingredients. This healthy spinach pasta is right and good for you!


8 ounce (225 g) spinach pasta or fettuccine pasta
1/2 cup chicken breast strips
1 1/2 tablespoons extra virgin olive oil
1 tablespoon butter
1 garlic clove, minced
Salt and pepper, to taste
1/4 cup soft ricotta cheese
4 slices of lemon, for garnish


* Cook pasta according to package instructions. Drain and set aside.

* In a large frying pan, heat oil and sauté chicken. Season with salt and pepper, cook until chicken is tender. Add in butter, garlic and spinach. Cook until garlic the aroma comes out. Add cooked pasta and ricotta. Mix well. Continue cooking until pasta is quite hot.

* Transfer in a pasta bowl and garnish with sliced lemon.

Serve and enjoy! You can also add some grated Parmesan cheese for additional flavors.

You can also grill your chicken before adding to your pasta, if desired.
