A delicious mix of stir-fried vegetables, fried tofu, and nuts makes for a tasty and healthful dish, ideal for just about any meal occasion.

Ingredients:

2 blocks firm tofu, cut into 1/2 inches strips
2 teaspoon Worcestershire sauce
salt and pepper, to season
vegetable oil, as needed
4 cloves garlic, minced
1/2 cup cashew, toasted and chopped
2 tablespoon brown sugar
1/4 cup cilantro, chopped
2 cups string beans, slice 2 inches long
1 cup carrot strips
1 small head cabbage, shredded
salt and black pepper, to taste
1/2 tablespoon cornstarch dissolved in 1/4 cup water
1 chicken broth cube

Procedures:

Season tofu strips with Worcestershire sauce, salt if needed and pepper.

Heat a large frying pan with a tablespoon of cooking oil.When pan is hot, stir fry tofu over medium high heat until slightly golden.When tofu is cooked, stir in garlic and cashew. Cook for another minute. Stir in brown sugar. Mix well. Remove pan from heat and stir in the cilantro. Transfer tofu out onto a plate and set aside.

In the same pan, add tablespoon of oil. Over medium high heat, stir-fry carrots, beans, and cabbage. Season with salt and black pepper as desired. Scoop vegetables into cooked tofu. Leaving the sauce in the pan.

Pour cornstarch mixture and chicken broth cube over the unwashed pan and simmer while scraping the golden bits to create a thin sauce. Add the sauce to the cooked tofu and vegetables and toss. Serve with rice.

Tofu is a very good source of protein and fiber necessary for good health.
