1/2 cup sun dried tomatoes in extra virgin olive oil, chopped
1/4 cup grated parmesan cheese
6 pieces asparagus stalks, cut into 2″inch thick, blanched
1 lemon, slice in wedges
salt and pepper, to season
2 tablespoons garlic oil, adjust depending to taste
500 grams (approx. 2 cups when cooked) fettuccine pasta
Cook pasta according to package directions. Drain then return to pan. Add in sun dried tomatoes in olive oil and asparagus. Toss well. Season with salt and pepper. Drizzle with garlic oil. Add some more olive oil if desired.
Transfer to a serving platter and sprinkle parmesan cheese on top. Serve with lemon wedges. Bon Appetit!
