This is a popular hot and sour soup in Thailand. A very comforting authentic soup dish that has a distinct taste and aromatic fresh ingredients with a hint of coconut milk. Perfect to serve on cold rainy days.
1 cup medium-sized shrimps, deveined
4 to 5 cups water
1 lemon grass, bruised
1 small-sized galangal, sliced
2 pieces kaffir lime leaves
6 pieces straw mushrooms or oyster mushrooms
4 tablespoons coconut milk
2 tablespoons fish sauce
1 tablespoon chili paste
3-4 tablespoons lime juice
2 tablespoons thinly sliced green onions
1 tablespoon finely chopped green chili
4 sprigs cilantro, chopped
* In a saucepan, combine water, galangal, lemon grass, and kaffir lime leaves. Bring to a boil over high medium heat and cook for 5 minutes.
* Add in shrimps and mushrooms and cook for another 2 minutes. Pour in coconut milk, fish sauce, lime juice, and chili paste. Put in green onions and green chili. Simmer for a few minutes. Turn of the heat.
* Transfer in a serving bowl and sprinkle with cilantro. Serve while hot.
You can also put fish or tofu, if desired.
