This flavorful fresh tomato based pasta dish is a one good healthy meal to serve. Quick and easy to make for a busy you. Sautéed chicken liver in tomato sauce with al dente cavatappi pasta. Perfect to serve with spinach or kale.
2 cups cavatappi pasta, cooked al dente (you can also use macaroni pasta)
1/3 cup chicken liver, boiled and sliced in small bite sizes
1 1/2 tablespoons olive oil
1 small-sized white onion, chopped
1/2 teaspoon minced garlic
1 tablespoon liquid seasoning
1 cup chopped peeled tomatoes
salt and pepper, to season
chopped spring onions, for garnish (optional)
* In a blender put in tomatoes, put in purée. Transfer in a bowl. Set aside.
* Heat olive oil in a pan. Place onion and garlic. Cook until onion is translucent. Sauté in chicken liver and liquid seasoning for 2 minutes. Season with a pinch of black pepper. Pour in tomato purée. Season with salt and pepper. Simmer for 3 to 5 minutes or until sauce thickens. Toss in cooked pasta. Turn off the heat.
