This divine dish is a French appetizer or starter. Finely chopped or puréed anchovies, olives, capers, garlic, with olive oil. Stuffed in cherry tomatoes and drizzled with more olive oil.


24 cherry tomatoes
1/2 cup canned or bottled anchovies
1/4 cup black olives
3 tablespoons capers
2-3 tablespoons chopped garlic
Olive oil
2 tablespoons chopped parsley
1/4 teaspoon kosher salt or onion salt
1/4 teaspoon fresh ground pepper
Dash of Worcestershire sauce


* Cut a 1/4 inch slice off the top of each tomatoes. With a small spoon or knife, scoop out enough tomato pulp to allow space for stuffing. Set aside.

* In a food processor or blender. Purée anchovies, black olives, capers, garlic and 1 tablespoon olive oil. Adjust oil depending on desired amount. Transfer in a bowl. Fold in remaining ingredients.

* Fill each tomato with 1 teaspoon of prepared olive stuffing.

Serve and drizzled with additional olive oil, if desired. You can also add sundried tomatoes and grated Parmesan cheese to stuffing for additional flavor.
