1 cup canned tuna flakes, drained
1 cup dried shiitake mushrooms
1 cup basil pesto (supermarket bought or you can make your own)
3 cloves garlic, minced
1 small onion, minced
2 tablespoons olive oil
salt and pepper, to taste
200 grams thin egg noodles
* Soak shiitake mushrooms in water for 30 minutes.Prepare noodles by following package instructions.Set aside.
* After soaking mushrooms, drain well and slice thinly (if using whole ones). Set aside.
* Heat oil over medium heat in a wok or skillet. Saute garlic and onion for about a minute then add tuna flakes and shiitake mushrooms. Stir fry for about 3 minutes, then add the pesto and noodles. Toss to combine well while cooking for another 3 minutes. Season with salt and pepper according to your taste. Transfer on to a serving plate and enjoy!
