1 cup self-raising flour, sifted
400 grams zucchini, grated
2 tomatoes, seeded, finely diced
1 medium onion, minced
1 cup grated cheddar cheese
1/4 cup vegetable or corn oil
* Preheat oven to 180°C. Grease and line a 30 x 20cm lamington pan.
* Carefully beat the eggs until well combined. Add the sifted flour and beat until smooth. Then add the grated zucchini, cheese, tomatoes, onion and oil. Stir to combine well. Pour into the prepared pan and bake for about 25-30 minutes or until a toothpick inserted comes out clean when tested. Cool in pan. Slice before serving.
